Don Julio’s Tequila is crafted from agave grown on the family estate in the highlands of Atotonilco, Jalisco, a region celebrated for its rich volcanic soil and ideal climate, which contribute to the agave’s exceptional quality. Agave plants in this region take seven years to fully mature, making their growth an integral part of the tequila’s flavor development. The slow, careful maturation process ensures that the agave reaches peak sweetness, complexity, and depth.
Each agave plant is hand-harvested by skilled jimadores (agave harvesters) to ensure only the highest quality piñas are selected. The harvesting process involves cutting the plant from its roots and removing the sharp, spiky leaves, leaving behind the piña—the heart of the agave plant. The piña is the essential raw material used in tequila production.
Once harvested, the piñas are transported to Don Julio’s distillery, where they are cut into uniform pieces. This ensures even baking, which is critical for extracting the maximum sweetness from the piñas. The pieces are then placed in traditional brick ovens, where they are slowly baked for several days. This extended baking process is key to converting the agave’s natural starches into fermentable sugars, giving the tequila its distinctive smooth and sweet profile.
After baking, the piñas are crushed to extract the agave juice, which is rich in natural sugars. This juice, or agave nectar, is then mixed with water to further release the sweet syrup. Yeast is added to this mixture, initiating fermentation. During fermentation, the sugars in the agave juice are converted into alcohol, resulting in a sweet, mildly alcoholic agave “beer” known as mosto. This stage is crucial for the development of the tequila’s base flavors.
The fermented mosto is then distilled twice in traditional copper pot stills. The first distillation removes impurities, while the second distillation refines the liquid and intensifies its flavors. This meticulous distillation process produces a smooth, high-quality tequila. After distillation, the tequila is transferred to either stainless steel tanks, which help preserve its fresh and vibrant characteristics, or to ex-bourbon casks, where it is aged to develop deeper, more complex flavors. The aging process imparts rich oak notes to the tequila, resulting in a more refined and mellow spirit.
